Ingredients

  • 1 lb salmon, cubed
  • 1 ½ cup uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • Cooking spray

Instructions

  1. Cook sushi rice per package instructions. Set aside.
  2. In a microwave-safe bowl, combine rice vinegar and sugar; microwave until dissolved and mix with the cooked rice.
  3. Preheat oven to 400°F (200°C).
  4. In a separate bowl, mix cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  5. Cut nori sheets into squares that fit muffin tins and lightly grease the tins with cooking spray.
  6. Place a spoonful of sushi rice in each nori square; press down lightly. Top with salmon mixture.
  7. Bake for 15 minutes or until salmon is cooked through and slightly golden.
  8. Garnish with additional sriracha and green onions before serving.
