Ingredients
- 1 lb salmon, cubed
- 1 ½ cup uncooked sushi rice
- 3 large nori sheets
- 1 tbsp light soy sauce
- 1 tbsp Kewpie mayo
- 1 tbsp sriracha
- Cooking spray
Instructions
- Cook sushi rice per package instructions. Set aside.
- In a microwave-safe bowl, combine rice vinegar and sugar; microwave until dissolved and mix with the cooked rice.
- Preheat oven to 400°F (200°C).
- In a separate bowl, mix cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
- Cut nori sheets into squares that fit muffin tins and lightly grease the tins with cooking spray.
- Place a spoonful of sushi rice in each nori square; press down lightly. Top with salmon mixture.
- Bake for 15 minutes or until salmon is cooked through and slightly golden.
- Garnish with additional sriracha and green onions before serving.
