  • 1 lb ground chicken
  • 8 small tortillas
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 cup shredded cabbage
  • ½ cup chopped dill pickles
  • ½ cup cottage cheese
  • 2 tbsp pickle brine
  • Ranch seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste

Instructions

  1. In a mixing bowl, combine ground chicken, garlic powder, paprika, salt, and pepper; form into eight balls.
  2. Heat a skillet over medium heat and place one tortilla in it. Sprinkle with cheese and add a chicken ball on top.
  3. Press down gently with a spatula to flatten; cook until the cheese is golden (about 2 minutes).
  4. Flip the taco to cook the chicken side for an additional 3-4 minutes until golden brown.
  5. In a bowl, mix shredded cabbage, chopped dill pickles, and pickle brine to make slaw.
  6. Blend cottage cheese with ranch seasoning and lemon juice for the drizzle.
  7. Assemble tacos by adding slaw on top of the chicken and drizzling with ranch sauce before serving.
