Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- â…“ cup mayonnaise
- â…“ cup sour cream
- 1 large lime (zested and juiced)
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- ¼ teaspoon kosher salt
Instructions
- In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper to create the dressing. Set aside.
- Boil water in a large pot. Add shrimp and cook for 2-3 minutes until they turn pink.
- Prepare an ice water bath while the shrimp cooks. Remove shrimp using a skimmer and cool them in the ice bath for about 3 minutes before draining.
- Chop cooled shrimp into bite-sized pieces and mix with diced cucumber, green onions, and dressing until well combined.
