  • 1 medium bell pepper, finely chopped
  • 1 small onion, finely chopped

  • 1 medium carrot, grated
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  2. In a mixing bowl, combine cooked quinoa, black beans, bell pepper, onion, garlic, carrot, egg, breadcrumbs, cumin, salt, and pepper. Mix until well combined.
  3. Form the mixture into patties about 3 inches wide. Place them on a parchment-lined baking sheet.
  4. Drizzle olive oil over the patties and bake for about 25-30 minutes or until golden brown on both sides; flip halfway through for even cooking.
