Ingredients
- 600 g (1.3 lbs) potatoes, peeled and grated
- 80 g (¾ cup) mozzarella cheese, grated
- 2 large eggs
- 150 g (5 oz) baby spinach
- 200 g (7 oz) champignon mushrooms, sliced
- 100 g (1 cup) mozzarella cheese for topping
- 30 g (¼ cup) Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine grated potatoes with eggs, oregano, parsley, salt, pepper, and mozzarella. Press firmly into a greased baking dish to form the crust.
- In a skillet over medium heat, sauté garlic in olive oil until fragrant. Add mushrooms and cook until softened; stir in spinach until wilted. Season with salt and pepper.
- Spread the filling over the potato crust and top with additional mozzarella and Parmesan cheese.
- Bake for about 55 minutes until golden brown on top.
- Allow cooling slightly before garnishing with parsley and slicing into wedges.
