  • 600 g (1.3 lbs) potatoes, peeled and grated
  • 80 g (¾ cup) mozzarella cheese, grated
  • 2 large eggs
  • 150 g (5 oz) baby spinach
  • 200 g (7 oz) champignon mushrooms, sliced
  • 100 g (1 cup) mozzarella cheese for topping
  • 30 g (¼ cup) Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine grated potatoes with eggs, oregano, parsley, salt, pepper, and mozzarella. Press firmly into a greased baking dish to form the crust.
  3. In a skillet over medium heat, sauté garlic in olive oil until fragrant. Add mushrooms and cook until softened; stir in spinach until wilted. Season with salt and pepper.
  4. Spread the filling over the potato crust and top with additional mozzarella and Parmesan cheese.
  5. Bake for about 55 minutes until golden brown on top.
  6. Allow cooling slightly before garnishing with parsley and slicing into wedges.
