  • 1 lb roast beef (thinly sliced)
  • 1.5 cups shredded cheese (mozzarella or provolone)
  • 4 large flour tortillas
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce
  • Salt & pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Lay out tortillas and fill each with slices of roast beef and shredded cheese, leaving an inch around the edges.
  3. Fold the sides of each tortilla in slightly and roll tightly from the bottom.
  4. Brush with melted butter and sprinkle with garlic powder, onion powder, and parsley.
  5. Bake for 12–15 minutes until golden brown and crispy.
  6. While baking, simmer beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper in a saucepan for au jus.
  7. Slice roll-ups into bite-sized pieces and serve warm with au jus.
