  • 6 slices bacon, chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the baby potatoes thoroughly, then halve them.
  3. Chop the bacon into small pieces.
  4. In a mixing bowl, combine the halved potatoes, olive oil, garlic powder, smoked paprika, salt, and pepper; toss until evenly coated.
  5. Spread the seasoned potatoes on the prepared baking sheet in a single layer and scatter the chopped bacon on top.
  6. Roast in the preheated oven for 30-35 minutes, flipping halfway through for even crispiness.
  7. During the last 5 minutes of cooking time, drizzle honey over the potatoes and bacon to achieve a beautiful caramelization.
