Ingredients

  • 1 pound ground Italian sausage (or vegan sausage)
  • 1 large white onion
  • 6 cloves garlic
  • 4 cups vegetable broth
  • 1 ½ pounds sweet potato
  • 1 can full-fat coconut milk
  • 2 large handfuls fresh kale
  • 2 tablespoons olive oil (divided)
  • 2 carrots, thinly sliced
  • 1 ½ teaspoons smoked paprika
  • 1 15-ounce can white beans, rinsed and drained
  • 5 fresh sage leaves
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Brown the sausage in olive oil over medium-high heat for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté diced onion for 5 minutes; add minced garlic and cook until fragrant.
  3. Add vegetable broth, sage leaves, carrots, sweet potatoes, smoked paprika, and half of the cooked sausage. Simmer for about 15 minutes.
  4. Stir in coconut milk and kale; cook until kale is tender.
  5. Season with salt and pepper to taste before serving with garnishes of your choice.
