  • 150 g crab meat or imitation crab meat (Surimi), shredded
  • ½ onion, diced
  • 2 spring onions, finely chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter (for sautéing)
  • ½ cup all-purpose flour (for dusting)
  • 1 egg
  • ½ cup panko breadcrumbs
  • Neutral oil (for frying)
  • 2 tbsp butter (for bechamel)
  • 2 tbsp all-purpose flour (for bechamel)
  • 120 mL whole milk

Instructions

  1. Prepare your ingredients for a smoother cooking process.
  2. Sauté crab meat, onion, and spring onions in melted butter until translucent.
  3. Cool the mixture and prepare the bechamel sauce by whisking melted butter and flour, then gradually adding milk until smooth.
  4. Combine the cooled mixture with the bechamel sauce and chill for at least one hour.
  5. Heat oil to 170C / 335F in a large pot; set up plates with flour, egg wash, and panko breadcrumbs.
  6. Form chilled mixture into balls, coat them first in flour, then egg wash, and finally panko crumbs.
  7. Fry croquettes until golden brown on each side.
  8. Drain on paper towels before serving.
