Ingredients
- 150 g crab meat or imitation crab meat (Surimi), shredded
- ½ onion, diced
- 2 spring onions, finely chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp butter (for sautéing)
- ½ cup all-purpose flour (for dusting)
- 1 egg
- ½ cup panko breadcrumbs
- Neutral oil (for frying)
- 2 tbsp butter (for bechamel)
- 2 tbsp all-purpose flour (for bechamel)
- 120 mL whole milk
Instructions
- Prepare your ingredients for a smoother cooking process.
- Sauté crab meat, onion, and spring onions in melted butter until translucent.
- Cool the mixture and prepare the bechamel sauce by whisking melted butter and flour, then gradually adding milk until smooth.
- Combine the cooled mixture with the bechamel sauce and chill for at least one hour.
- Heat oil to 170C / 335F in a large pot; set up plates with flour, egg wash, and panko breadcrumbs.
- Form chilled mixture into balls, coat them first in flour, then egg wash, and finally panko crumbs.
- Fry croquettes until golden brown on each side.
- Drain on paper towels before serving.
