  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach leaves
  • 1/2 cup dried cranberries
  • 4 ounces Brie cheese, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast and season with salt, pepper, garlic powder, onion powder, and thyme.
  3. Sauté spinach in olive oil until wilted. Mix with cranberries.
  4. Stuff each chicken breast with the spinach-cranberry mixture and slices of Brie.
  5. Secure with toothpicks and sear in a cast iron skillet until golden brown on both sides.
  6. Add chicken broth and transfer the skillet to the oven. Bake for 20-25 minutes until cooked through (internal temperature reaches 165°F or 74°C).
  7. Allow to rest for 5 minutes before serving.
