  • 3 cloves garlic
  • 1 teaspoon turmeric
  • 6 cups vegetable broth
  • 1 cup lentils
  • 1 can chickpeas
  • 1 cup navy beans
  • 1 cup kidney beans
  • 8 ounces Persian noodles or linguine
  • 2 cups spinach
  • 1 cup cilantro
  • 1 cup parsley
  • 1 cup dill
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent, then add minced garlic and turmeric.
  2. Stir in lentils, chickpeas, navy beans, and kidney beans until well combined.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for about 20 minutes until lentils are tender.
  4. Add noodles, spinach, cilantro, parsley, and dill; simmer for another 10 minutes until noodles are cooked through.
