  • 1 cup sun-dried tomatoes, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups baby spinach
  • 4 cups chicken broth
  • 1 cup heavy cream or 8 oz cream cheese
  • ¾ cup grated Parmesan cheese
  • 1½ cups orzo pasta
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the onion, chopping the sun-dried tomatoes, and mincing the garlic.
  2. Load the crockpot with chicken, onion, garlic, and sun-dried tomatoes. Pour in chicken broth and season with Italian seasoning, salt, and pepper.
  3. Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours until the chicken is tender.
  4. Shred the chicken inside the crockpot using two forks.
  5. Stir in heavy cream or cream cheese along with uncooked orzo pasta. Cook on HIGH for an additional 20–30 minutes until the orzo is tender.
  6. Add baby spinach and grated Parmesan cheese; stir until combined.
