  • Cherry tomatoes

  • Dijon mustard

Instructions

  1. Wash all vegetables under cold water and chop mixed greens into bite-sized pieces. Halve the cherry tomatoes, slice the cucumber and radishes.
  2. Grill or bake the chicken breast until cooked through; let cool before slicing. Hard-boil the eggs by boiling them for 9-12 minutes; then cool in ice water before peeling.
  3. In a large bowl, combine mixed greens, chopped vegetables, sliced chicken, crumbled bacon, sliced hard-boiled eggs, diced avocado, and blue cheese.
  4. Drizzle with olive oil and red wine vinegar; add Dijon mustard, salt, and pepper to taste.
  5. Gently toss ingredients together until well combined and serve immediately.
