  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and salt. Mix until well combined.
  3. Allow the mixture to rest for about 5 minutes to let the oats absorb moisture.
  4. Scoop the mixture into the mini muffin pan, filling each cup almost to the top.
  5. Bake for 18–20 minutes until set and lightly golden on top.
  6. Let cool in the pan for a few minutes before transferring to a wire rack.
