  • 7 ounces Ghirardelli Bittersweet Baking Chips
  • 1/2 cup unsalted butter
  • 3 large eggs (separated)
  • 1/2 cup granulated sugar
  • 4 ounces fresh strawberries (hulled and chopped)
  • 1 cup heavy whipping cream
  • 3 tablespoons water
  • 2 ounces Ghirardelli White Chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. Melt bittersweet chocolate chips and butter together until smooth. Let cool slightly.
  3. Whisk egg yolks and sugar until pale; mix in melted chocolate.
  4. Fold in almond meal, flour, vanilla extract, and salt.
  5. Pour into the prepared pan and bake for about 20 minutes until set. Cool completely.
  6. Bloom gelatin in water; heat milk and dissolve gelatin in it.
  7. Whisk egg yolks and sugar; combine with warm milk over low heat until thickened.
  8. Stir in strawberries and lemon juice, then fold in whipped cream gently.
  9. Spread mousse over cooled torte base; refrigerate for at least three hours.
  10. For the glaze, melt white chocolate with heavy cream and corn syrup; pour over chilled mousse layer.
  11. Serve topped with whipped cream and Ghirardelli Strawberry Bark SQUARES.
