Ingredients
- 4 cups cooked sushi rice
- 1/2 pound boneless skinless chicken
- Teriyaki sauce (made from soy sauce, mirin, brown sugar, and garlic)
- 1/2 teaspoon salt
- 2 tablespoons furikake (optional)
- 2 teaspoons soy sauce
- 1 tablespoon sake (or water)
- 1/4 teaspoon baking soda
- 1 teaspoon cornstarch
- 1 ½ tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon brown sugar
- 1 tablespoon oil
- 1 tablespoon minced garlic
- 1 sheet nori (cut into small rectangles)
Instructions
- Cook the sushi rice according to package instructions. Once done, mix in salt and furikake.
- Cut chicken into small pieces and marinate with soy sauce, sake, baking soda, cornstarch, mirin, brown sugar, and minced garlic for 30 minutes.
- In a nonstick pan, cook marinated chicken until fully cooked; add teriyaki sauce mixture until thickened.
- Wet hands and scoop 1/3 cup of rice into your palm. Create a well in the center, fill with chicken filling, cover with another scoop of rice, and shape into a triangle. Wrap with nori.
