  • 32 oz frozen shredded hashbrowns
  • 1 can cream of chicken soup (10.5 oz)
  • 2 cups sour cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium yellow onion, finely chopped
  • 6 tbsp butter, divided
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups cornflakes, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the chopped onion in 2 tablespoons of butter in a skillet until soft and golden.
  3. In a large mixing bowl, combine cream of chicken soup, sour cream, shredded cheddar cheese, sautéed onions, and 2 tablespoons melted butter. Mix well.
  4. Season with salt and pepper.
  5. Gently fold in the frozen hashbrowns until fully coated.
  6. Spread the mixture into a greased 9×13-inch baking dish.
  7. In a small bowl, mix crushed cornflakes with the remaining melted butter and sprinkle over the casserole.
  8. Bake uncovered for about 45 minutes until bubbly and golden brown.
  9. Let rest for 5–10 minutes before serving.
