Ingredients

  • Unsalted butter
  • All-purpose flour
  • Cornstarch
  • Baking soda

Instructions

  1. Melt 18 tablespoons of unsalted butter in a frying pan over medium heat until golden brown. Allow it to cool for about 40 minutes.
  2. In a bowl, sift together 2 2/3 cups all-purpose flour, 1 tablespoon cornstarch, 1 teaspoon baking soda, 1 teaspoon salt, and spices (2 teaspoons cinnamon, 1 teaspoon ginger, 1/4 teaspoon nutmeg, 1/2 teaspoon cardamom, 1/4 teaspoon cloves).
  3. In another bowl, whisk together the cooled butter with 1 1/2 cups sugar, 2 large eggs, and 1 teaspoon vanilla extract until well combined.
  4. Gradually mix the dry ingredients into the wet mixture using a rubber spatula until just combined.
  5. Chill the dough for about 10 minutes while preheating your oven to 350°F (175°C) and lining cookie sheets with parchment paper.
  6. Roll dough into balls and coat them in chai sugar made from mixing sugar with ground spices.
  7. Bake for 13–15 minutes until lightly golden around the edges. Let cool on the pan for six minutes before transferring to a wire rack.
