Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) blocks cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 3 ripe bananas, sliced thick
- ⅓ cup brown sugar
- 2 tbsp dark rum
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter; press into a springform pan. Bake for 8 minutes; cool.
- Lower oven to 325°F (163°C). Beat cream cheese until smooth; add sugar, eggs one at a time, sour cream, and vanilla until combined.
- Pour filling over cooled crust. Bake for 55–65 minutes; center should jiggle slightly. Cool in oven with door cracked for an hour.
- Chill in the fridge for at least 4 hours or overnight.
- In a skillet, melt butter and brown sugar; add banana slices until golden and sticky.
- For the glaze, melt butter and brown sugar in a saucepan; stir in dark rum and simmer for 2–3 minutes.
- Top cheesecake with caramelized bananas and drizzle with rum glaze before serving.
