- 1 cup ricotta cheese (drained)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 cup mini chocolate chips (optional)

Instructions
- In a mixing bowl, combine flour, sugar, cinnamon, and salt. Add butter, egg yolk, and wine/vinegar. Mix until dough forms.
- Knead the dough for about 5 minutes until smooth, wrap in plastic wrap, and let rest for 30 minutes.
- Roll out the dough to 1/8 inch thick and cut out 3-inch circles.
- Heat oil in a deep skillet to 350°F (175°C).
- Wrap each circle around a cannoli mold and seal edges with water.
- Fry for 2–3 minutes until golden brown; drain on paper towels.
- Prepare filling by mixing ricotta, powdered sugar, vanilla extract, and cinnamon until smooth; fold in chocolate chips if using.
- Fill cooled shells with filling just before serving.
