Instructions

  1. Hard boil the eggs by placing them in a saucepan covered with water. Bring to a boil, then let stand covered for 12 minutes. Cool under cold water and peel.
  2. Halve the eggs lengthwise, remove yolks, and mash them in a mixing bowl.
  3. Mix in mayonnaise, mustard, and spices until smooth; chill the filling.
  4. Coat shrimp in remaining spices and sear in olive oil until just cooked; let cool.
  5. Pipe or spoon filling into egg whites and top each with a shrimp, jalapeño slice, and chives.
