Instructions

  1. Boil the eggs: Place 12 eggs in a pot, cover with cold water, bring to a boil over medium-high heat. Cover and let sit off heat for 11 minutes.
  2. Cool and peel: Transfer the eggs to an ice bath to cool quickly. Once cooled, peel and halve the eggs lengthwise, scooping out the yolks into a mixing bowl.
  3. Mix filling: Combine yolks with mayonnaise, Creole mustard, Cajun seasoning, hot sauce, celery, and green onion in the bowl. Blend until smooth.
  4. Fill egg whites: Spoon or pipe the mixture back into the egg white halves. Garnish with additional green onions if desired.
