  • 1 package Potato gnocchi
  • 1 tablespoon Olive oil
  • 2 medium Yellow onions
  • 1 teaspoon Kosher salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Fresh thyme
  • 1/4 cup Dry white wine
  • 1 tablespoon Balsamic vinegar
  • 6 ounces Gruyère cheese

Instructions

  1. In a non-stick skillet over medium heat, warm the olive oil and add thinly sliced onions with salt. Cook until golden brown, about 15–20 minutes.
  2. Meanwhile, boil salted water in a pot. Cook the gnocchi until they float (about 2–3 minutes), then drain.
  3. In the same skillet, add butter to melt after removing onions. Stir in black pepper and thyme. Deglaze with white wine.
  4. Return the gnocchi to the skillet, add balsamic vinegar, and mix well. Top with shredded Gruyère and allow it to melt slightly.
  5. Serve hot, garnished with extra black pepper.
