  • 1 Tb brown sugar
  • 2 teaspoons kosher salt
  • 2 1/2 teaspoons active dry yeast
  • 4 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter (melted)
  • 2 quarts water (for boiling)
  • 2/3 cup baking soda
  • 1 egg yolk (for egg wash)
  • Pretzel salt or additional kosher salt for sprinkling

Instructions

  1. In a mixing bowl, combine warm water, brown sugar, and kosher salt. Sprinkle yeast on top and let sit until bubbly (about 10 minutes).
  2. Use a stand mixer fitted with a dough hook to mix in flour and melted butter. Knead until smooth (about 4 minutes).
  3. Shape dough into a ball, place in an oiled bowl, cover, and let rise in a warm place until doubled (about 1 hour).
  4. In a large pot, combine water and baking soda; bring to a boil. Preheat oven to 450°F and prepare baking sheets with parchment paper.
  5. Divide risen dough into eight portions and shape each into pretzels.
  6. Boil each pretzel in the baking soda water for 30 seconds before transferring to the baking sheet.
  7. Brush each pretzel with an egg wash and sprinkle with salt.
  8. Bake for 12–14 minutes until golden brown.
