  • 6 tbsp unsalted butter (melted)
  • 2 ripe bananas (mashed)
  • 24 oz cream cheese (softened)
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • Fresh banana slices and whipped cream for topping

Instructions

  1. Preheat the oven to 325°F (163°C). Combine graham cracker crumbs, optional sugar, and melted butter in a bowl; press into the bottom of a springform pan. Bake for 8–10 minutes; cool.
  2. Beat cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time. Stir in sour cream, vanilla extract, and mashed bananas until just blended.
  3. Pour filling over cooled crust in the springform pan placed in a water bath. Bake for 60–70 minutes until edges are set but center jiggles slightly. Cool in the oven with the door ajar for about an hour.
  4. Chill in the fridge for at least 4 hours or overnight before serving with fresh banana slices and whipped cream.
