  • ½ medium onion
  • ¼ cup + 2 tablespoons whole wheat panko breadcrumbs
  • 3 tablespoons minced cilantro
  • 1 egg white
  • 2 garlic cloves
  • ¾ teaspoon salt
  • Creamy Avocado Sauce: ¾ California avocado
  • 3 tablespoons fat-free plain Greek yogurt
  • Juice of ½ lime

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine salmon, onion, breadcrumbs, cilantro, egg white, garlic, salt, and spices. Pulse until slightly chunky.
  3. Form mixture into 1-inch meatballs and place on the prepared baking sheet.
  4. Bake for about 18 minutes until golden brown.
  5. For the sauce, mash avocado and mix with Greek yogurt, lime juice, garlic, water, cilantro, and seasonings until smooth.
  6. Serve warm with avocado sauce.
