  • 8 oz pasta
  • 4 cups broccoli florets
  • 1/2 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/2 tsp fresh cracked black pepper
  • 8 oz brick of feta cheese
  • 1 tbsp lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp fresh chopped basil

Instructions

  1. Preheat the oven to 400°F (200°C). Cut broccoli florets into quarters.
  2. In a baking dish, combine broccoli with olive oil, salt, and pepper. Create a space in the center for the feta cheese and drizzle with more olive oil.
  3. Bake for around 35 minutes until feta is soft and broccoli is tender.
  4. Cook pasta according to package instructions, reserving 1/2 cup of cooking water before draining.
  5. Combine baked vegetables with pasta in a large bowl. Add reserved pasta water gradually until reaching desired creaminess.
  6. Stir in lemon juice, lemon zest, and fresh basil before serving warm.
