Ingredients
- 2 lb boneless skinless chicken thighs
- 6 garlic cloves, thinly sliced
- 3-inch piece ginger, peeled and finely chopped
- 1 bundle scallions, thinly sliced (whites and greens separated)
- 10 cups water
- 8 oz dried ramen noodles
- 1 cup carrots, cut into matchsticks
- 1/4 cup black rice vinegar
- 1/4 cup soy sauce
- 2 tbsp toasted sesame oil
Instructions
- Prep all ingredients: slice garlic, chop ginger, and slice scallions into whites and greens.
- In a large pot over medium heat, add chicken thighs and water; season with salt and pepper. Bring to a boil and cook for about 15 minutes until tender.
- Shred cooked chicken with forks; return to the broth along with garlic, ginger, scallion whites, carrots, vinegar, soy sauce, and sesame oil. Simmer for an additional 5 minutes.
