  • Dijon mustard
  • Shallot
  • Red onion

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes in olive oil and roast on a baking sheet for about 15 minutes until tender.
  3. Rinse quinoa under cold water and cook in apple cider until fluffy; add cranberries near the end of cooking.
  4. In a bowl, combine cooked quinoa mixture with roasted sweet potatoes, diced apples, and minced red onion.
  5. Blend vinaigrette ingredients in a food processor; drizzle over salad and toss to combine.
