  • 1.5 pounds pork tenderloin
  • 1 cup apple cider
  • 2 large sweet potatoes
  • 1 medium onion
  • 3 cloves garlic
  • Olive oil
  • Fresh thyme
  • Butter
  • Heavy cream or milk
  • Salt and pepper

Instructions

  1. Marinate pork medallions in half of the apple cider, minced garlic, thyme, salt, and pepper for 15 minutes to 2 hours.
  2. Boil salted water in a large pot and cook cubed sweet potatoes for 15-20 minutes until tender.
  3. Drain sweet potatoes, return them to the pot, and mash with butter, cream, salt, and optional cinnamon.
  4. Heat olive oil in a skillet over medium-high heat and sear the marinated pork for 3-4 minutes on each side until browned.
  5. Sauté sliced onions in the same skillet until softened. Add reserved marinade and remaining apple cider; bring to a simmer.
  6. Cook pork in the sauce until it reaches an internal temperature of 145°F (63°C). Stir in butter before serving.
  7. Serve by plating mashed sweet potatoes topped with apple cider pork and drizzled sauce.
