  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 jar (16 oz) Alfredo sauce
  • 1 cup shredded mozzarella cheese

Instructions

  2. Halve the spaghetti squash lengthwise and scoop out seeds. Drizzle insides with olive oil.
  3. Place cut-side down on a baking sheet with broccoli florets tossed in remaining olive oil.
  4. Roast for 30 minutes until squash is fork-tender and broccoli is lightly browned.
  5. Scrape spaghetti strands from the roasted squash into a bowl. Combine with roasted broccoli, Alfredo sauce, and half of the mozzarella cheese.
  6. Transfer mixture to a casserole dish, top with remaining cheese, and broil for a few minutes until golden.
